Rice Lasagna


Ingredients:
For three or four Persons
2      cup rice
500 gm minced beef
4       cup boiling water
4      tea spoon of vegetable oil
1      medium onion, chopped
4      large tomato, blended
2      tea spoon of tomato paste
3      cup béchamel sauce
1      cup mozzarella cheese, shredded
½     cup parmesan cheese, shredded
½     tea spoon of black pepper
1      tea spoon of dried oregano
3      tea spoon of salt (to taste)
Instructions:
1.       Heat oven to 375 F.
2.       Wash the rice very well and soak in salted warm water for 30 minutes.
3.       In medium pan heat water until boiling add 2 tea spoon of salt, 2 tea spoon of oil, drain rice thoroughly and add to the pan. Return to boil and cook uncovered for 5 minutes.
4.       Cover the pan tightly, and cook on low heat for 15 – 20 minutes.
5.       Meanwhile heat 2 tea spoon of oil in medium saucepan and sauté onion until golden brown add the minced meat and seasoning stirring well for 5 – 7 minutes.
6.       Add blended tomato, tomato paste and cook for 10 – 12 minutes.
7.       In a medium size casserole spread 1-cup béchamel sauce and tops it with 1/3 of the cooked rice sprinkle with ½ cup mozzarella cheese and then spread ½ of the minced meat mixture. Repeat.
8.       Spread the left cup of béchamel sauce n top and sprinkle with parmesan cheese.
9.       Bake for 30– 35 minutes or until light golden leave to set for 10 minutes before serving.
